Pizza sauce & cheese
Many amateur chefs
sprinkle the cheese on top of a pizza. This
is wrong. First add the passata (tomato
sauce), then the cheese and add the toppings
at the end.
You need 4 1/2 oz.
coarsely
grated Edam cheese. Sprinkle the cheese evenly over the passata.
The cheese for this pizza will cost you approximately US $ 1.43.

When it comes to
cheese there is no room for
compromise. The cheese must have
a high fat content of at least
40% of dry weight so that it
will not burn in your oven. Rich
Edam cheese is perfect for this.
It also has the right salt
content. Do not use Gouda,
because Gouda is too bitter.
Mozzarella is not right either,
because it is too soft and not
salty enough. Piero has tested a
dozen cheeses. Your only
alternative is to use Mozzarella
and Cheddar in equal parts. The
Mozzarella makes it creamy, the
Cheddar adds flavor. But this
dramatically adds to the price
of the ingredients. Edam cheese
serves the same purpose, is
cheaper and less work. It blends
to a creamy mass and makes your
pizza not only tasty &
flavorsome but also moist &
juicy.

Neither use
"vegan cheese", nor "pizza cheese" nor "pizza mix"!

Read the package
to discover what's really
inside! Nice-sounding names like
"pizza mix" often conceal
so-called "vegan cheese". This
does not consist of real cheese
at all or only partly. What
looks like cheese is really a
soya bean mix that has different
baking characteristics to real
cheese and – at least in Piero's
opinion – tastes disgusting.
They cost less than real cheese,
but they cannot hold a candle to
real cheese in terms of taste. |
