The color of
peppers only indicates the
degree of ripeness. The peppers
are all the same: simply
peppers. Green peppers are
harvested early and have an
acerbic and bitter taste. Yellow
peppers are slightly sweet and
will not contrast with the other
ingredients of a Piero's pizza.
Red peppers are sweet and for
this reason they are not
suitable for a Piero's pizza
either. If you only have yellow
or red peppers at hand, give the
peppers a miss all together.
Dice approximately 1/4 of a green pepper (this equals approximately 1 1/4 oz.).
The pieces should be approximately 1/2” long.
During the baking
process pieces that are too
large stay too hard while pieces
that are too small burn. Thin
slices will also tend to either
cook to rags or burn. Only diced
pieces with a length of at least 1/2”
have the right size to become
soft during the baking process
but yet to keep their bitter
taste and fresh look.
