Pepperoni is a thing of
the past: use chili-pepperoni instead! This
sausage will give your Piero's pizza a real
kick. It is hotter, more spicy and more
salty then standard pepperoni and therefore
the star of our authentic recipe.
You will need 12 slices of chili-pepperoni (with a diameter of approximately 1 1/8”.
This equals approximately 1/2 oz.).
Place the
chili-pepperoni sausage slices
evenly distributed around the
rim only. Not on top of the rim
but right next to it where the
pureed tomatoes and the cheese
start. As the rim has no spicy
flavor you need the hot, spicy
and salty flavor of the
chili-pepperonis right there.
This will turn the flavorless
rim into a culinary highlight.
If you place the pepperoni
slices elsewhere, the center of
your pizza will become to salty
while the rim will be flavorless
and boring. Some other pizza
chains try to avoid this problem
by filling the rim with cheese.
But this is difficult to do at
home, so the easier solution is
to place the pepperoni slices
properly.
